Abstract
Disclosed is the process of producing banana chips coated with cacao chocolate comprising the following steps of: a.preparing of ingredients such as 1,000 grams of slice banana, cooking oil, 50 grams of cacao tablets, 50 grams of cocoa butter, and 60 grams of granulated sugar; b. peeling of banana and slicing the banana using mandolin slicer; c. heating cooking oil in a wide pot; d. placing the banana slices into the heated oil; e.deep frying the banana slices until crisp; f. removing the fried banana slices and set aside; g. melting the cacao tablets; h. mixing the 50 grams of cocoa butter and 60 grams of granulated sugar to the melted cacao and mix for an hour in a melanger; i. tempering the cacao mixture and putting in a bowl; j.coating the banana slices with the cacao mixture; k.placing the coated banana slices in a baking sheet; and l.packing the coated banana slices. The products can be described as crispy sweetened banana chips coated with cacao chocolate.
