The utility model, a process of making diced sweet potato (Ipomea batatas) hopia describes a diced hopia de Segovia and its preparation thereof. Specifically, it is directed to a method of making a diced hopia is made from sweet potato (Ipomea batatas) flour, water, sugar and salt for doughs and mashed sweet potato, condensed milk, cacao powder, water and flavor variants. Its preparation comprises the steps of adding different flavorings, extracting sweet potato flour by drying and grinding, combining dry and liquid ingredients for fillings and doughs, flattening, rolling and cutting of dough and placing the filling inside the dough.
