Abstract
The process of producing freeze-dried pickled bamboo shoot is disclosed wherein the said bamboo shoots are prepared through the steps of selecting, washing, weighing, pre-processing (pickling), freezing, freeze drying, packaging and labelling. The process of freeze-drying the pickled bamboo shoots will enable it to retain its nutritional value compared to other methods of preservation, such as canning and dehydrating, which uses higher temperatures that can destroy more than half (50%) its nutritional value. Freeze drying pickled bamboo shoots prolonged its shelf life, making the product versatile, accessible and convenient while retaining its aroma, flavor, color and shape.
