Abstract
The process of producing powdered Arius (Podocarpus costalis) fruit juice is disclosed wherein Arius (Podocarpus costalis) fruit is blended with water to form an extract, then added with maltodextrin and sprayed dried to produce fine, light violet powder. Spray dried lemon, sugar, citric acid and sodium benzoate are also added to produce the juice formulation.
