Abstract
This utility model relates to food processing in particular to the process of producing Lubeg (Syzygium lineatum) prunes. Lubeg pulp was used to make prunes. For preparation of the prunes, medium ripe Lubeg fruit was harvested and selected carefully. Followed by sorting, washing and disinfecting, initial weighing, deseeding, final weighing, soaking in lime or allum solution for twelve hours, washing with tap water for twenty (20) times, draining, caramelizing, initial reheating, final reheating and draining, sun drying, packing, and storing the Lubeg prunes.
