Abstract
This utility model relates to a process of producing snack food made from crispy dragon fruit peel which comprises selecting quality dragon fruit peel, washing the selected dragon fruit peel with water, soaking the dragon fruit peel for three (3) hours, slicing uniformly the dragon fruit peel, cooking the dragon fruit peel for five (5) minutes, cooling the cooked dragon fruit peel, freezing the cooked dragon fruit peel overnight, vacuum frying the frozen dragon fruit peel at 90-100 oC under 70 cmHg vacuum for 40-44 minutes, cooling the vacuum fried dragon fruit peel at room temperature, and weighing and packing on an induction sealed PET bottle.
