Abstract
Flying fish protein powder is a convenient stable food seasoning product characterized as having a light brown color with the preferred strong fishy odor. The product was liked very much by the consumers. This product could be used as condiment for mixed veggies and other food preparations. The process for the preparation of the flying fish protein powder starts with thoroughly washing and cleaning of the flying fish. The fish is boiled for 30 minutes, afterwhich, the flesh is separated from the bones. The fish flesh is then dried under the heat of the sun for 8 hours. The dried fish flesh is subjected to grinding using an electric grinder. The flying fish protein powder is packed in a foil packaging material at 5 grams each pack and sealed to lengthen its shelf life.
