Abstract
The formulated noodles enriched with "Aramang" (Nematopalaemon tenuipes) powder is among the value added products developed in the product development training center of the Cagayan State University Aparri campus using the processed/developed Aramang (Nematopalaemon tenuipes) powder. Formulating the aramang - enriched noodles involves the following steps. First, mix in a large bowl 500 grams Class A all purpose flour, 10 grams aramang powder and 2.5 grams salt. Mix the mixture well to evenly distribute the salt then make a well or hoe in the center of the mixture. In a separate bowl, combine the 2 pieces lightly beaten eggs and 150 ml water. Add the mixture to the flour mixture earlier prepared and mix well to ensure that all the ingredients are evenly mixed. Set aside. Sprinkle a clean kneading surface with flour then turn the dough into smaller sizes which are oblong in shapes. Knead and insert the dough in the noodle machine for several times until the desired thickness is attained. Insert the thin dough in the cuter of the noodle machine to produce the noodles. Spread the noodles in a drying tray and dry for 4 hours under the heat of the sun. Air cooling and cook or pack the dried aramang enriched - noodles in polyethylene pouch if not to be eaten yet.
