Title Process of making Aramang (Nematopalaemon tenuipes) Powder Enriched Polvoron
Abstract
The formulation of the "Aramang" (Nematopalaemon tenuipes) - enriched polvoron involves the following procedures: Weighing all the necessary ingredients for the polvoron mixture, then followed by toasting the 250 grams flour and 20 grams aramang powder in a frying pan for 5 minutes to attain a light brown color. In a glass dish/bowl, mix 50 grams powdered milk and 50 grams white sugar. Add the mixture of toasted flour and aramang powder. Melt 50 grams of butter or in a pan and add the mixture while still hot. Mix well with a spoon or ladle and make sure that there are no lumps of milk or flour. Air cool the mixture for 30 minutes, then shape the polvoron with a molder and arrange them in a tray. Freeze the molded polvoron for 5 minutes to make them firm then wrap in colored cellophane for packing. The production of this protein - enriched innovative product could be an entrepreneurial activity that could generate employment and could be a livelihood opportunity to augment the income of rural folks.
