Abstract
This utility model relates to a process of producing snack food made from crispy squash (Cucurbita sp.) which comprises selecting quality and newly harvested squash, washing the selected squash with 50ppm chlorinated water, peeling and slicing the washed squash into 2mm thickness, cooking the sliced squash for 7 mins, freezing the cooked squash overnight, vacuum frying the frozen squash, cooling the vacuum fried vegetables to room temperature and packing on a 89µm thickness laminated pillow pouch.
